SUMMARY

Creates and writes spec books, custom craft cocktail menus, and the training of bartenders to deliver craft cocktails that lead the industry in flavor, style, and visual appearance. Helps ensure that we deliver “Unsurpassed Service” in a manner that maintains a clean, attractive & organized environment in accordance with all Company standards, policies, and procedures.

ESSENTIAL QUALIFICATIONS

EDUCATION

High School Diploma or GED preferred

EXPERIENCE

Three (3) years of experience creating seasonal craft cocktail menus in an upscale, fine dining environment.

KNOWLEDGE, SKILLS, & ABILITIES

  • Must be 21+ years of age.
  • Must be ServSafe certified.
  • Bartending academy certification preferred
  • Demonstrated ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
  • Proven experience in training a team in all aspects of bartending.
  • Extensive bartending background and updated knowledge on craft cocktails.
  • Proven ability to manage time with minimal supervision.
  • Proven ability to work effectively in a high-volume environment while maintaining proper portion control, safety, health, and service standards.
  • Must have cash handling experience; responsible for all transactions in a Casino environment.
  • Must be able to work a flexible schedule.
  • Must be willing and able to participate in ongoing beverage training.
  • Must be TIPS certified or be able to pass within 3 weeks of employment.
  • Maintain awareness of guest alcohol intake following established Responsible Alcohol Service policy & TIPS guidelines.


DUTIES AND RESPONSIBILITIES

  • Responsible for practicing, supporting, and promoting Gun Lake Casino’s culture of Guest service and demonstrating Gun Lake’s “Unsurpassed Service” standards at all times.
  • Must have a minimum of 3 years as a Mixologist developing craft cocktail drinks and menus.
  • Responsible for creating and training bartenders to be able to serve their guests and create a memorable experience for our Guests.
  • Responsible for development of the team in the knowledge of liquor classes (i.e. well, call, premium, ultra & specialty) and brand names of the products we offer; train others on acceptable alternative items to offer a Guest in the event an item is not available.
  • Maintain thorough knowledge of new drink trends & their preparation.
  • Must be able to teach the team how to prepare and pour drinks in a timely manner. Must be able to adhere to Company pouring standards.
  • Teach the bartenders the correct way to use a shaker and hour to pour the drink correctly and finishing it with the correct garnish.
  • Must be able to write all drink recipes and build the spec book that allows the team to have a thorough understanding and knowledge of all drink recipes and the preparation and garnishment of the drinks. Use appropriate glassware as determined by outlet training and/or drink recipes.
  • Teach bartenders how to maintain a clean, properly stocked, and organized bar, lounge, dining area, and side station including, but not limited to all glassware, condiments, and dry goods.
  • Create par levels for all products and equipment needs within the designated work area at the beginning of each shift.
  • Be approachable to internal and external Guests. Be able to anticipate Guests’ needs and check on them regularly.
  • Ensure that bartenders deliver all food and beverage items to the Guests in a timely, accurate & presentable manner.
  • Knowledge of Company Safety procedures and emergency evacuation procedures for the Guests and Team Members.
  • Must ensure the team follows all health and safety regulations are followed.
  • Responsible for the verification of all liquor deliveries; ensure that all shortages and overages are reported.
  • Teach the team how to run and comply with all closing reports and procedures at the end of the shift in accordance with the Company’s departmental standards.
  • Create the expectation that the Beverage Team must be able to answer Guest’s questions regarding menus, promotions and be familiar with all menu items ingredients within their venue in addition to the appropriate sequence of service for food and beverage service.
  • Must maintain proper flow of beverage service to internal and external guests in accordance with all Gun Lake Casino’s standards and cocktail call procedures, in an “Unsurpassed Service” and efficient manner.

PHYSICAL REQUIREMENTS

  • Requires normal, corrective vision range, the ability to see color, and the ability to distinguish letters, numbers, and symbols.
  • Must be capable of lifting up to 50 lbs. with or without assistance.
  • Ability to climb, push, pull, stoop, grasp, walk, sit, stand, bend and reach for the duration of shift.
  • Requires manual dexterity to operate job-related equipment.
  • Requires normal hearing range.

WORK CONDITIONS

Work is typically in an area that may be unusually hot, cold, and/or noisy and may contain secondhand smoke. Work may be performed in small areas with a 3 ft. high access. Tasks performed from a non-sitting position. Team Members will be required to stand walk, lift, reach, push, pull and grasp. These tasks include the maintenance and care of the assigned areas. Work may entail trained chemical usage. Constant contact with fellow Team Members and Guests.
